Gluten Free Fudge Brownie Cookies

There are a lot of people who have jumped on the Gluten Free bandwagon for different reasons. I personally don’t know much about it other than what little research I did once upon a time when a friend’s daughter had issues. They thought she needed to be gluten free so I did a little research but not much and after they realized that wasn’t her problem and she could eat gluten, my research days on it went out the window.

One of Mark’s co-workers though, he and his family have gone gluten free for heath reasons. Mason shared this recipe with Mark and he sent it to me in an email. I wasn’t sure why and emailed him back asking if he’d tasted them. He told me no. Friday night we changed that answer to yes. I was interested in trying them and of course they’re cookies, so I must try them, right? My dad and I joke that he’s the cookie monster and I’m pretty sure I get that from him.

One thing I noticed is that they use A LOT of cocoa powder. 1 cup to be exact. So Saturday I had to go and buy more cocoa powder. Oh well, they were totally worth it. Should I admit that Friday night we had Ribeye Steaks and mashed potatoes for dinner, one of my favorite meals… And… I was baking cookies during dinner so when the timer went off I went and pulled one tray out of the oven to put the next in and got caught eating raw cookie dough out of the bowl. I was asked if I was too good to eat dinner with everyone else. haha. It happens. I finished licking my finger and then came back to the table with a HUGE grin on my face.

So I guess now the only thing to do is share this recipe.

Gluten Free Fudge Brownie Cookies

1/2 c butter
1/2 c brown sugar
1/2 c white sugar
1 egg
1 tsp vanilla
1/4 tsp salt
1/2 tsp baking soda
1 c cocoa powder
1/2 c dark chocolate chips
1/2 c white chocolate chips

Cream butter and both sugars together (about 5 minutes), then beat in egg and vanilla. Mix in cocoa, salt and soda, then stir in chips.
Bake on parchment lined sheet at 350˚F, about 11 min for soft cookies, or 15 for crunchy cookies.
Cool a few minutes on pan before removing to rack to cool completely.
Makes about 2 dozen.
